About Me

Luck is when opportunity meets preparation.
I love to cook! Its one of my most favorite things to do. Since I've become involved in modeling and fitness competitions I've really started to clean up my diet and discovered fabulous new recipes. I love to find an old recipe and recreate it so that its still tastes unbelievable and builds the kind of body that I want. I can't wait to share my recipes with all of you!
I also love to fly airplanes! I caught the aviation bug years ago and flying is what I do. Traveling, seeing new places and discovering myself in the process. I am a firm believer that we are capable of anything we put our minds to.
Training is a big part of my life. I workout almost every day. I like to mix up my cardio workouts and my weight training workouts so they are almost never the same from one week to the next! And I love love love Yoga! :)

My Big Mistake = My big save protein pancakes

So I was making a protein shake yesterday and was rushing around the kitchen. I make a protein shake and protein pancakes with me for work almost every day...lol but I was in a big rush and accidentally put 6egg whites in the blender then threw in an apple and 1/2 cup of oats with a scoop of protein powder. Blended it thinking it was water and started to drink it....it was a little thicker than normal ;) I hate to waste so i threw it all in my non stick pan and made 3 big pancakes. Umm it turned out better than I was expecting. Here's the recipe....

1 scoop vanilla protein powder
1/2 cup oats
dash cinnamon
6 egg whites
1 gala apple
Blend until smooth. Cook in a non stick pan with cooking spray. Should make 3 pancakes. Makes 2 servings. Or 1.5 pancakes per serving.

I cool them cut them into wedges and put them in plastic sandwich bags. Throw them in a cooler and off to work I go...they really are quite perfect!
